This main course goes great with Greek salad, a light soup like Tomato Bisque and freshly baked Vegan Focaccia Bread.

Ingredients
  1. *4 very large portabella mushrooms, stemmed and gills scraped out
  2. *2 TBSP olive oil
  3. *2 cloves garlic, minced
  4. *½ cup onion, finely chopped
  5. *1 cup ricotta cheese
  6. *1 cup spinach, finely chopped
  7. *¼ cup fresh basil, chopped
  8. *1 cup mozzarella or Provolone cheese, grated
  9. *Salt and fresh pepper to taste
Optional Garnishes
  1. *Parsley
  2. *Fresh Basil
  3. *Fresh Rosemary
  4. *Fresh Romano or parmesan cheese
Instructions
  1. Preheat oven to 375’F. Gently rub olive oil on the outer portion of the mushrooms.
  2. Heat a large skillet and sauté onion and garlic for 4 minutes. Stir in spinach and cook until done. Cool.
  3. In a large bowl mix ricotta cheese, Provolone and basil. Mix in onion, garlic and spinach mixture.
  4. Stir in grated cheese, salt and pepper.
  5. With a small spoon, fill each mushroom with the cheese mixture using generous amounts.
  6. Bake in preheated oven for 18-20 minutes or until mushrooms are tender and the cheese is melted. Enjoy!
