healthy detox salad 2Now is a good time to start a small detox, after indulging over the holidays and right before spring. Here is a toxin-eliminating detox salad to help get you back on track. This detox salad is full of dark leafy greens, fresh vegetables and a healthy dressing.

Here is a breakdown of the detox ingredients:

Kale: High in antioxidants, chlorophyll, and vitamins A, C, and K. Helps remove chemical toxins naturally.

Spinach: High in iron, calcium, protein, chlorophyll, and vitamins A, C, E and K. Helps eliminate toxins that can cause cancer and also beautifies the skin making it soft and smooth.

Arugula: Also known as the Salad Rocket. High in folic acid, iron, magnesium, folate, copper, and vitamins A, C and K. Helps maintain a healthy body weight, eliminate toxic cancer-causing elements in the body and may protect against cataracts and age-related macular degeneration.

Parsley: High in iron, folate, chlorophyll, and vitamins A, C, and K. Assists with kidney stimulation to flush out toxins. Also a great blood purifier that removes heavy metals.

Cilantro and Coriander (cilantro seed): A good source of thiamin, zinc, riboflavin, niacin, folate, calcium, iron, pantothenic acid, magnesium, phosphorus, potassium, copper, manganese, and vitamins A, C, E, K and B6. Ingredients
  1. 1 cup kale, chopped fine
  2. 3 cups spinach, cleaned well and lightly torn into bite size pieces
  3. 2 cups arugula, lightly torn into bite size pieces
  4. ½ cup chives (optional), chopped
  5. ½ cup parsley, chopped fine
  6. ½ cup cilantro, chopped fine
  7. 1-2 avocados, cubed
Lemon Garlic Detox Salad Dressing with Herbs
  1. * ½ cup avocado or extra-virgin olive oil
  2. * 3 TBLS fresh lemon juice
  3. * 3 cloves garlic, minced
  4. * 1 teaspoon finely grated lemon zest (optional)
  5. * Rock or Himalayan salt, to taste
  6. * Black pepper, to taste
  7. * ¾-1 teaspoon of herb, your choice (cumin, turmeric or basil)
Instructions
For Detox Salad
  1. Clean all greens. Make sure you clean the spinach well, for it has a tendency to have a lot of dirt.
  2. Allow greens to dry on a towel. Meanwhile, prepare the rest of the detox salad dressing
  3. With your hands, gently tear the greens in to bite size pieces
  4. Cube the avocado then gently stir into detox salad until combined
  5. Drizzle with detox salad dressing
  6. Garnish with edible flowers, organic black olives,nuts or halved cherry tomatoes. Enjoy!
For Lemon Garlic Detox Salad Dressing with Herbs
  1. Mince garlic
  2. Combine oil and lemon juice. Add garlic. Stir in choice of herb; (cumin, turmeric or basil)
  3. The detox salad dressing gets better in time, allowing the herbs and garlic to intermingle with the oil.
  4. Gently stir or mix before drizzling onto detox salad
