  1. * 1 ½ cup organic heavy cream (can add ½ cup more if milkier taste is desired)
  2. * 24 ounces organic dark chocolate (70% cocoa)
  3. * 16 ounces additional organic dark chocolate (70% cocoa)
Various Flavors (added in step 4)
  1. * 3 teaspoons organic rum extract
  2. * 3 teaspoons organic almond extract
  3. * 3 teaspoons organic raspberry extract
  4. * 2 ½ cups coconut (use 1 cup for rolling)
  5. * 3 teaspoons organic peppermint extract
  6. * 6 TBLS orange zest or 3 teaspoons organic orange extract
  7. * 1 ½ cup raisins soaked in 2-4 TBLS rum for 3 hours (drain)
  8. * 1 ½ cup chopped walnuts soaked in 2-4 TBLS cognac for 2-3 hours (drain)
  9. * 1 ½ cup chopped almonds soaked in 2-4 TBLS amaretto for 2-3 hours (drain)
Various Flavors for Rolling (last step)
  1. * ½ cup cacao powder
  2. * ½ cup finely chopped nuts; almonds, walnuts, pistachios, etc.
  3. * 6 TBLS finely ground coffee beans (dark roast like French or Italian)
  4. * Chai: 2 teaspoons cinnamon, 1 teaspoon cardamom and cloves, ½ teaspoon ginger
  1. Break the chocolate into small even sized pieces and place is a large bowl
  2. Bring the cream to a boil slowly
  3. Pour hot cream over the chocolate and little at a time while continually stirring until it becomes uniform or the same consistency
  4. Add desired flavoring while the ganache is still warm
  5. When the ganache warm it will be creamy
  6. Traditional French bakers use a whisk to thicken the ganache. It needs to be thick enough to form balls
  7. Ganache can also be placed in the refrigerator to thicken
Forming Truffles
  1. Use two spoons or a baking sac to form balls. You want them to be uniform and round
  2. Place truffles on parchment or wax paper
  3. Melt the remaining dark chocolate slowly in a double boiler.
  4. Dip the truffles in the melted chocolate and then roll in cocoa or preferred ingredient
  5. Store in an airtight container in the refrigerator. Will keep up to 2 weeks
  6. Place in room temperature an hour or two before serving
  7. For making gifts you can place each truffle in an unbleached mini paper cup and arrange them in a nice sustainable container made of recycled paper or tin.
