Saffron and Mushroom Risotto Recipe

Vegetarian Mushroom Risotto

This saffron and mushroom risotto has a very unique flavor. A touch of saffron coupled with the earthy taste of mushrooms.

In truth, this risotto is quite blissful.

Savor every bite with this fabulous main dish that is sure to please almost everyone.

Goes great with a healthy green vinaigrette salad, maybe some roasted tomatoes with garlic or lightly steamed broccoli and fresh bread.

Ingredients
  1. Risotto
  2. *6 cups vegetable broth
  3. *2 TBSP olive oil, reserve ½
  4. *1 clove garlic, minced
  5. *½ cup sherry or dry white wine
  6. *1 ½ cup Arborio rice
  7. *1 large pinch of saffron
  8. *Salt and fresh ground pepper to taste
  9. *½ cup of fresh parmesan or Romano cheese, grated
  10. Mushrooms
  11. *1 TBL butter
  12. *1 TBL olive oil
  13. *2-3 clove garlic, minced
  14. *3-4 cups shitake, portabella or button mushrooms, chopped
  15. *½ green or red bell pepper, seeded and chopped
  16. *¼ cup sherry of dry white wine
  17. *Salt and fresh ground pepper to taste
Instructions
  1. Sauté onion, garlic for 5-7 minutes. Add rice, salt, wine, saffron and ½ cup vegetable broth. Bring to a slow boil then simmer on low until liquid is absorbed, stir often. Add another ½ cup of vegetable broth. Repeat the process, until all the vegetable broth is used. This takes around 20 minutes.
  2. Stir in grated cheese, salt and pepper.
  3. While the rice is cooking, prepare the mushrooms. Melt the butter and oil in a skillet over medium-low heat. Light sauté the garlic then add the mushrooms and peppers, stirring often. Cook for 6-8 minutes, until tender.
  4. Add the sherry to the mushrooms and bring to a slow boil. Cook until half of the liquid is gone.
  5. Pour the mushrooms over the saffron rice and Serve warm. Enjoy!
