Vegan Tofu Scramble

Perfect for a quick breakfast or a healthy evening meal.

  1. * 1 lb. firm tofu, crumbled
  2. * ½ onion, chopped
  3. * 1 clove garlic, minced
  4. * 1 teaspoon turmeric
  5. * 1-2 teaspoons rock or Himalayan salt, to taste
  6. * 1 TBLS extra virgin olive oil
  7. * Fresh salsa
  8. * 1 ripe avocado, mashed
  9. * 2 teaspoons salsa
  10. * 1 teaspoon garlic powder
  11. * Corn or rice tortillas or pita bread, organic
  12. * ½ - 1 cup sprouts or preferred greens (optional)
  1. In a large skillet, heat oil and sauté garlic on low heat for 2-3 minutes. Add onions, turmeric and salt. Cook on low heat 6-7 minutes or until golden brown. Remove from heat
  2. In a small bowl, mash avocado, salsa and garlic powder together
  3. Wrap tofu, salsa and avocado mixture inside a tortilla. Add sprouts or greens if desired

  3. Note: For a variety, you can add mushrooms, carrots, zucchini, green bell pepper or black olives when sautéing.
